My new favorite meal recipe is delicious, healthy, filling, and refreshing. I love it! It takes about 5 minutes to prepare.
Avocado and Beet “Pink Lady” Salad
To prepare: buy local beets from one of the many Green Farmer’s Markets in NYC and Brooklyn, http://www.cenyc.org/greenmarket. Buy an organic avocado from your food market. Have some sea salt on hand.
Wash then cut up a small to medium sized Beet, (dice, slice, whatever your heart desires). Throw in bowl.
Cut a small to medium organic avocado in half by rotating a knife (be careful!) around the avocado. Twist gently to separate the halves. Slice the avocado and scoop the “meat” out. Your choice if you want to use the whole avocado or only half. Throw in bowl and toss with beets.
Add a dash of salt.
You’ll probably get pink fingers! It’s just a side effect of eating a healthy meal!
